i have a dream..

i have a dream.
a dream of owning a restaurant.
a restaurant in kuching.
a kuching restaurant that serves italian, western and char kuey teow.

char kuey teow will never be on my list actually.
a full fine dining restaurant will never happen,
because of the target market.
would you pay rm30+ for a plate of pasta?
or would you prefer to pay rm3 for a plate of pasta?
if you do find a plate of pasta for rm3, please let me know.
you see? thats the problem with most people. not all.
most people arnt willing to pay even rm15 for a plate of pasta.
but did you count the cost of the ingredients?
you think cooking pasta is simple and cheap?
it takes time and effort. even a simple turkey ham spaghetti cabonara isnt as easy as it sounds.
unless you cook it, petaling street style.

so, back to the dream.
with the sky as my limit for dreams, i dream of the restaurant, day in day out.
from the menu, to the layout of the restaurant and kitchen, to the color of the walls to the type of tables and chairs to the drinks to the alcohol to the equipment to the pricing and the target market and worst part of all, the budget.

i know some might say im foolish to think too much and some might say its good, but abit too early to dream and some say, GOOD JOB, THINK MORE AND MORE. well, honestly, i cant stop myself but think and think and think and when i sleep, i imagine myself, 4 or 5 years from today, owning one of the most talked restaurant for its REASONABLE price, GOOD food, FRIENDLY boss, and, 'wah, really worth it leh' conversations when they leave after they put on 1kg after leaving the restaurant.

current problems i face which needs more thinking and solutions.
food authorities - rats

location- location plays a very important role. i could serve the bestest food in kuching but located at 7 1/2 mile, who the fucks coming for pizza and pasta? right? i currently have a few places to look out for. (sorry, i guess only kuching peeps would know where its at). 2 1/2 mile near kfc, jalan song near everise or the food court nearby friendship park, smack right in the city centre near mojo or soho (then we can go paaarrrtttyyyy after work) or somewhere opposite hilton kuching's main door. there are reasons why i chose these specific places. simple - target market. would i prefer to cater for only kuching peeps? or would i like to slaughter the ang mos too? you get my point?

concept - would it be just plain semi-relaxed-cozy dining which has a wine bar or would it have draft beers ; kilkenny, heineken, tiger, carlsberg and hoegarrden too? and would diners have to eat then they could be seated, or could they come and chill and drink beer?

money - cost of renovation and etc cannot be revealed yet because, i cant give even the estimated amount due to the increased price of petrol which made every thing else increase except my salary. nabeh. but from my unpredictable estimations, its going to take up around rm400k, excluding rental or price of the shoplot. rm400k includes kitchen equipment, cutleries, crockery, lightings, paint, mirrors, sound system, food stock and etc.

i guess thats all i can say for now. till i have more brilliant full of dreams dream.

dad use to say.. no matter where the good food is, he would be there. U know him well, so I guess if u have one at 13th mile he would be there as well, as long as u got his fav!! hahahah!~

gilda : u sure? waitress in kuching, salary around 1000 only wor. but staff meal provided. =P
